Have any of you ever had cookie bars? I have now had them twice, and I think I can safely say that they are way better than standard cookies. They are like a cross between cookies and cake. These cookie bars have a softer consistency than a cookie, and require no chilling time. I don’t know about you, but I find chilling times to be agony.
A prefect recipe to kick off the start of summer!
Recipe: Servings: 12 bars Time, active: 15 minutes Time, inactive: 1 hour Time, Total: 1 hour and 15 minutes.
2 sticks of salted butter, softened
1 and a 1/2 cups of white sugar
2 cups of flour
1/2 teaspoon baking powder
1 teaspoon of vanilla extract
3/4 of a cup of M & M baking chips
Preheat oven to 350 degrees, and grease a 9″ by 9″ cake pan. Set aside.
Cream the butter and sugar together on medium speed in an electric stand or hand mixer, then add the eggs.
Beat in the flour, vanilla, and baking powder.
Now switch to low speed, and add the M & Ms.
Scoop the batter/dough into the prepared pan, and bake for 30-40 minutes.
Let cool, then slice into bars.
Will keep at room temperature in an airtight container for 1 week.
